Celeste started roasting green coffee beans back in 2014, and what began as a small operation is now Polson’s spot for organic, fair-trade coffee roasted, bagged, and brewed right on Main Street. She and John run the place, and the in-house bakery is half the reason regulars stop in: fresh bread and chocolate chip cookies pull people in even on decaf days. Grab a breakfast sandwich or a wedge of quiche in the morning, or come back for the chicken pot pie that’s built its own following. There’s a full lineup of teas too if coffee’s not your thing.
