Flathead Lake Cheese

Flathead Lake Cheese is a bright yellow, copper-roofed creamery a couple blocks off Main Street in Polson, where artisan cheese gets made in small batches from locally collected milk. When the weather cooperates, they pasteurize using solar thermal heat, and much of the building was put together by the cheesemakers themselves.
